A simple but versatile dish that requires no expertise in the kitchen whatsoever, Crispy Kangkong is perfect as a side dish or pulutan. This is one of the few vegetable dishes that my husband more than willingly eats. The best part? It’s healthy and super easy to make.
Ingredients:
1 bundle (tali) ng kangkong
salt
pepper
flour
lotsa oil for deep frying
1 large egg, beaten
Directions:
1. Snip out the kangkong leaves from the main stem, leaving only about one to two inches of stem attached to the leaf.
2. Wash the kangkong thoroughly and dry using a strainer.
3. Drizzle with iodized salt and pepper. Set aside for about 15-20 minutes.
4. Heat oil in pan. Make sure your oil is enough to submerge the leaves.
5. Dip each leaf in beaten egg then cover with flour. Make sure both sides are adequately covered.
6. Fry in medium heat until light brown in color. Each side should only take about 2 minutes or so to fry.
7. Serve hot and crispy!
